Clay Eisaman: Stillwater is a neighborhood spot in downtown Fairfax. We serve fresh beer, natural wine, and carefully crafted cocktails -- with a focus on agave spirits and small-batch, craft distillates.
SJ: What is your favorite thing to drink at Stillwater?
CE: People love drinking cocktails here but you can’t sleep on our beer program -- when I saddle up to the bar, it’s with a beer from Tired Hands outta Ardmore, PA and a copita of mezcal.
SJ: What is your current favorite drink on the menu that incorporates a Super Jugoso product?
CE: We use a handful of SJ products and they’re all amazing … but if I have to choose a favorite, it’s the Holy Divider.
Holy Divider
1.5 oz mezcal
.75 oz Super Jugoso Pineapple Gomme
.75 oz fresh lime juice
.5 oz ginger syrup
.5 oz Amaro Angelino
.5 oz Averna
1.5 oz soda water
- Combine everything except soda water in a shaker
- Shake with ice
- Strain over fresh ice into a Collins glass and top with soda
- Garnish with an orange slice, lime wedge, and cherry
SJ: What is something you wish more people knew about your bar?
CE: We’re here for locals. Stillwater is owned by locals -- it’s for the people who were here before us and will be here after us. We’ll always hold a barstool for the person who wants a familiar, cheap, crushable beer and a plate of fries after work.
SJ: Do you have a favorite Super Jugoso product?
CE: Super Jugoso Cream of Coconut is from another planet!
SJ: When can people come visit you?
CE: Stillwater is open Tuesday-Sunday (I’m here Tuesday and Wednesday behind the bar). Come say hi and party with us 😘😘.
